Grilled Halibut with Pineapple Salsa


4 (4-oz.) skinless halibut fillets
fresh lemon juice

Pineapple Salsa:
1 C fresh pineapple, diced
¾ C red bell pepper, diced
½ C red onion, diced
¼ C fresh cilantro, chopped
juice of ¼ lime
¼ t crushed red pepper
1/8 t ground cinnamon


1. For pineapple salsa: Combine pineapple, bell pepper, onion, cilantro, lime juice, crushed red pepper and cinnamon in medium bowl. Cover with plastic wrap and marinate in refrigerator for 1 hour. Bring to room temperature before serving.

2. Grill halibut fillets on pre-soaked wood cooking planks over grill for 3 to 5 minutes on each side or until halibut flakes easily when tested with a fork. Lightly squeeze juice of lemon over fillets. Serve salsa over halibut
